  1. Take a big vessel keep 4 cups water to boil then add Basmati rice keep stove on medium flame..
  2. Stir, Cover and cook the rice till the rice grains are cooked well..
  3. Add the cooked rice in a strainer and let the water drain away..
  4. Take a skillet add 2 to 3 tsp oil add 1/4 cup onion fry well take onions out add chopped potatoes and fry well..
  5. After taking the potatoes out add 2 tsp butter to the skillet then add Cumin, Onion, 1 tsp Ginger and Garlic paste. Sauté till raw smell goes away..
  6. Then Add 2 tsp Pav Baji Masala, 1/4 tsp red chili powder, 1/4 turmeric powder and Salt (if you are using butter with salt then check in this stage)..
  7. Stir and sauté well then add all chopped vegetables except fried onion and potatoes..
  8. Cook all vegetables well keep the skillet closed so that vegetables are well cooked..
  9. After 10 minutes all vegetables are cooked add rice and mix gently..
  10. You may add 1 tsp of Pav Baji Masala to the rice, Panner scrambled, fried onions and Potatoes, Add 1/2 tsp lime juice. Cook for 5 mins more.
  11. Garnish with Coriander leaves. Enjoy with raita..
